I've tried countless numbers of salad recipes over the past two years, because I seem to keep making salad for lunch. It's the easiest option when there's not always access to a microwave, and though it's not the nicest thing to have in the middle of winter, the recent warm weather in Sydney has been perfect for salad so I thought I'd quickly share with you one of my favourite salad dressing recipes.
I like to buy a bag of green leaves at the beginning of the week and usually tend to throw in whatever else is in the fridge for my salads and bring a different dressing each day to keep things interesting. This honey mustard vinaigrette is my go to when I don't have much time because it's so easy to make. A bit of mustard, honey, vinegar and olive oil is all you need- shake it up and you've got yourself a pretty tasty and refreshing salad dressing!
I think it goes well with a little sweetness in the salad, so I've put sultanas and apple in my salad as well but the dressing will go well with any salad mix really.
Honey Mustard Vinaigrette

Serves 2-4
1 tablespoon Dijon mustard
4 tablespoons white vinegar
4 tablespoon extra-virgin olive oil
1 tablespoon honey
1/2 teaspoon ground black pepper
Whisk all ingredients together in a bowl and serve over your favourite salad mix.

I too love to make my own salad dressings I find mayonnaise far to rich and it can drown a salad. This dressing sounds perfect :D
