After visiting 16 food courts, 2500 photos of fast food menus, numerous analyses and a 20+ page report- I have finally reached the end of my research semester! And in addition to the invaluable skills you learn as a researcher, I now also know Sydney food courts inside out.
Want to know the latest Macca's or Hungry Jacks promotions? Or the kilojoule content of the burger you just bought? Or perhaps which food court in Sydney serves the cheapest fish and chips?

So yes, I do know that KFC isn't too good for you- for one thing, its meals have ridiculously high kilojoule contents. Let's just say I could easily have way more than my day's worth of energy needs in one sitting (and may possibly have done so on numerous occasions). And yes, that is a piece of fried chicken sitting on top of my salad there.

But I don't have this every day so you needn't worry about my health, or my waistline :)
As much as it is unhealthy, we do quite like KFC in my family, and have it for dinner once every couple of months when the cravings for fried chicken come around. On this particular occasion though, the store overdid the salt so much we couldn't eat much of it, so I heated it up the next day, threw together some veggies and made a salad out of it!
I've been getting pretty good at making salads, as they're my preferred type of lunch when the weather isn't too cold. This honey mustard dressing is one of my favourites as it only takes a couple of minutes to mix and goes well with just about any salad!
With only one small piece of fried chicken, and plenty of colourful veggies, I wouldn't say that this dish is too bad for you ;)
Honey Mustard Dressing
Recipe from allrecipes
1/4 cup mayonnaise
1 tablespoon prepared mustard
1 tablespoon honey
1/2 tablespoon lemon juice
In a small bowl, whisk together the mayonnaise, mustard, honey, and lemon juice. Store covered in the refrigerator.

Can't remember when was I last time I eat KFC. But sure once a while I like the whipped potato and coleslaw. This home version with honey mustard dressing is super. The whole dish is a complete healthy filling meal.

what a great idea to use mayo as the emulsifier! i've never made a dressing quite like this but it sounds perfect, especially for chicken!
