Kale and Chickpea Salad with Spicy Peanut Dressing


Another warm week, another salad recipe!

To add a little variety to my weekday lunches, I bought a rather large bunch of kale so ended up making a variety of kale salads for the week. My favourite was this kale and chickpea salad with a spicy peanut dressing I'd come across on pinterest which worked surprisingly well. The dressing is nice and creamy and also very very tasty (once you read the ingredients list you'll see why).


Because I had such a big bunch of kale, I thought I'd also make some kale chips (using this recipe) which turned out quite crispy although quite bitter as well.

Kale and Chickpea Salad with Spicy Peanut Dressing Recipe
Makes ~2-4 depending on serve size

For the Dressing
2 tablespoons smooth peanut butter
2 tablespoons rice-wine vinegar
1 teaspoon sesame oil
1 teaspoon soy sauce
1 teaspoon honey or brown sugar
½ teaspoon sriracha
1 clove garlic, finely minced
1 teaspoon freshly grated ginger
2 tablespoons water

For the Salad
2 cups kale, washed and chopped
1/4 tsp salt
1 can chickpeas, rinsed and drained
1 carrot, peeled and julienned
1/2 cup corn
1/2 cup beetroot, sliced
1/2 avocado, diced (optional)
1/4 cup sultanas

1. Whisk together all the ingredients for the dressing in bowl, adding more water to thin if necessary.
2. Place chopped kale in a large bowl. Sprinkle with salt. Massage salt into leaves until kale softens and turns a bit darker in color
3. Add the remaining salad ingredients and toss to combine.
4. Add dressing and stir
