Quick Creamy Pesto Pasta


You always find the good recipes at the weirdest of times, when you're least expecting it, and most recently for me, this was when I whipped up a quick pasta some 10 minutes before I rushed off to work.

I've made plenty of pastas before, and have gone through plenty of pasta recipes which I've closely followed and planned ahead but none have quite been quite as good as this one which I threw together in hopes of bringing something edible for my work lunch. Sometimes you can get more than you wish for!

I'd bought a jar of pesto from the supermarket, and had read up on some 'pesto pasta' recipes which had involved mixing the pesto with cream and pasta, so using that as a guideline, I threw in a bit of everything I could find in the fridge, pesto, pasta, a splash of milk, and a bit of cheese and put it in a box.

The smell was what really attracted the rest of the family over, but as I’d only made enough for one, it was hands off my lunch!. But I was nice enough to make it for them for lunch the following week. And the week after. Infact, it has sort of become my go-to pasta recipe when there’s nothing else I feel like making since it’s so quick to make, and everyone in my family seems to love it!

It's probably not the most amazing pasta ever for most people, but it's one we thoroughly enjoy and it's a little something different to the usual pastas we make at home :)

Creamy Pesto Pasta Recipe
Adapted from this recipe

Serves 4
½ cup basil pesto (store bought or home made)
350g penne pasta
100mL milk (or cream if you want to make it creamier)
¼ cup sun-dried tomatoes, thinly sliced
1/3 cup cheddar cheese
Onions (optional)
Various veg/meat to your liking

  1. Cook pasta in a saucepan of boiling, salted water, following packet directions, until tender.
  2. Return pasta to pan over medium-low heat. Add all the other ingredients. Stir to combine. Cook, stirring, for 1 to 2 minutes or until heated through and cheese has melted into the sauce.
  3. Divide between bowls and serve.

The pasta dish is nice but for us, life is all about rice and spicy dishes.

This is definitely my kind of quick to put together lunch. I love pasta dishes for my lunch especially pesto based ones :D
